Sourdough buns with sausage filling

Tasty durable pastry, suitable for breakfast or also as a treat for a visitor. Also an excellent snack for celebrations.


  • 500g flour
  • 20g fresh yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 50g room temperature butter
  • 50ml oil
  • 200ml lukewarm milk
  • egg yolk
  • sesam seeds


  • 100g sausage cut into small cubes
  • 50g grated hard cheese


  • Crumble the yeast into a bowl, sprinkle with sugar and mix. Leave to stand for 10 minutes until the yeast forms a sourdough starter.
  • Put the flour, sourdough starter, salt, oil and butter in a bowl and gradually add the milk until an elastic, non-sticky dough is formed.
  • Knead this for at least 10 minutes, then cover and leave to rise for an hour. After rising, divide the dough into 2 parts.
  • Roll out the first part into a rectangle.
  • For the filling, mix the finely chopped sausage and grated cheese.
  • Then stretch each part of the dough into an egg shape with your hands, put part of the filling in the middle, close the edges of the dough tightly and roll into a ball. Place the dough on a baking sheet.
  • Repeat with the remaining dough and the remaining filling. Leave the dough, covered, to stand for 10 minutes.
  • Preheat the oven to 200C.
  • Brush the rolls with the egg yolk, then sprinkle with seeds (e.g. poppy seeds/ sesame seeds) and leave to bake
    for approx. 20 minutes until golden.
  • Once cooled, store in a sealed container.
