Ingredients:
- 2 ripe bananas
- 1 tbsp ground flaxseed + 2 tbsp water (egg substitute)
- a couple of drops of lemon juice
- 1 cup sugar
- 0.5 cup cocoa
- 1 cup (vegetable) milk
- 2 cups flour
- 1 packet (40g) cocoa pudding powder
- 1/2 cup vegetable oil or melted coconut fat
- 1/2 cup baking powder
- 1 teaspoon vanilla sugar
- Pinch of salt
Procedure:
- Cut the bananas into slices and place in a bowl with the sugar.
- Add the lemon juice, then blend everything with an immersion blender to a puree.

- Add the flour, cocoa, baking powder, custard powder and oil to the banana mixture. Season the batter with vanilla sugar and salt.
- Line a muffin tin with paper muffin cups or use silicone muffin tins. The quantity shown is for 12 pieces.
- Scoop the batter into the muffin tins using an ice cream scoop. Bake at 180C approx. 25-30 minutes.
- If you have used silicone moulds I recommend removing them from the moulds when they have cooled completely.
