Healthy muffins from leftover bananas


  • 2 ripe bananas
  • 1 tbsp ground flaxseed + 2 tbsp water (egg substitute)
  • a couple of drops of lemon juice
  • 1 cup sugar
  • 0.5 cup cocoa
  • 1 cup (vegetable) milk
  • 2 cups flour
  • 1 packet (40g) cocoa pudding powder
  • 1/2 cup vegetable oil or melted coconut fat
  • 1/2 cup baking powder
  • 1 teaspoon vanilla sugar
  • Pinch of salt


  • Cut the bananas into slices and place in a bowl with the sugar.
  • Add the lemon juice, then blend everything with an immersion blender to a puree.
  • Leave the flax seeds to plump up-
  • Add the flour, cocoa, baking powder, custard powder and oil to the banana mixture. Season the batter with vanilla sugar and salt.
  • Line a muffin tin with paper muffin cups or use silicone muffin tins. The quantity shown is for 12 pieces.
  • Scoop the batter into the muffin tins using an ice cream scoop. Bake at 180C approx. 25-30 minutes.
  • If you have used silicone moulds I recommend removing them from the moulds when they have cooled completely.
